For those who haven’t heard about having one of the world’s greatest sushi masters in Vancouver - welcome to Tojo’s Restaurant. Opened in 1988 (relocated in 2007), Tojo’s has been on the forefront of introducing fine Japanese cuisine to the West Coast.
In addition to being the creator of the California Roll (called the Tojo Roll and made with real crab at his restaurant), Tojo constantly supports local farmers and fish mongers as often as possible.
A typical dinner for me starts and ends with Tojo Tuna with favorite dishes such as sablefish, halibut cheeks and lobster cones savored in-between.
I think I just decided on dinner for tonight. See you there.
