One of my favourite seasons officially kicked off on May 9th…Spot Prawn season!
Known for its sweet taste and firm texture, the Spot Prawn is one of seven commercial species of shrimp found on the West Coast. These treasures of the Pacific Ocean can be purchased until the end of June at most seafood retailers, but I tend to find the best selection at Granville Island. Another gem on Granville Island is the Stock Market - after purchasing your shrimp, swing by and pick up their cilantro pesto. With those two ingredients you will have all you need to create an impressive, delicious dinner treat.
I prefer cooking prawns deveined with the shells off, and the tails on. It involves more prep work, but the effort is well worth it. Heat a small amount of oil over medium high heat, sauté until pink on one side, turn over and add pesto to the pan. Continue sautéing until cooked through, remove from heat, and ENJOY!
One final tip; always purchase fresh rather than frozen.
